While I was pregnant, I often craved Shrimp Fried Rice, but I also wanted to avoid take-out as much as I could, so I started looking for easy Shrimp Fried Rice recipes and I found that many recipes had one too many ingredients. Ingredients I didn’t have available in my pantry.
So I started with the basic ingredients, and made it my own. What makes this recipe different is the Jalapeño kick. I’d like to think that my son and I created this recipe together.
Many times, I craved something spicy, and his Kicks gave me the idea that this Shrimp Fried Rice also needed a Kick. We hope you enjoy it as much as we do.
